This cucumber agua fresca low carb recipe is refreshing, keto-friendly, and made with real ingredients like lime, mint, and monk fruit.
2 large cucumbers, peeled and chopped
Juice of 2 limes
2–3 cups cold filtered water
1 tablespoon monk fruit sweetener (or to taste)
Pinch of sea salt
Handful of fresh mint or basil (optional)
1. Add chopped cucumbers, lime juice, water, sweetener, and salt to a blender.
2. Blend until completely smooth.
3. Strain through fine mesh sieve or cheesecloth into pitcher.
4. Taste and adjust sweetness or lime as needed.
5. Chill in fridge for at least 30 minutes.
6. Serve over ice with fresh herbs or cucumber garnish.
Use organic cucumbers to skip peeling.
For a fizzy version, replace half the water with chilled seltzer.
