2 cups fresh pineapple, diced
1 large cucumber, thinly sliced
1 tbsp red onion, finely chopped
Juice of 1 lime
1 tsp chili flakes (or to taste)
1/2 tsp sea salt
Fresh mint or cilantro (optional)
1. Dice the pineapple and thinly slice the cucumber.
2. Combine them in a large bowl with red onion.
3. Add lime juice, chili flakes, and sea salt.
4. Toss everything gently to mix well.
5. Let the salad sit for 10 minutes before serving.
6. Garnish with fresh herbs if desired.
Tastes even better after chilling for 1 hour.
