Rich fudgy brownies layered with tangy cheesecake swirled with sweet cherries. A simple, crowd-pleasing dessert perfect for any occasion.
Ingredients
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar, divided
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt
200g (2 cups) cream cheese, room temperature
1/2 cup granulated sugar
1/2 cup plain Greek yogurt
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 cup pitted cherries, fresh or canned
Instructions
Preheat oven to 350°F (175°C) and grease a 8-inch square baking dish.
Melt butter and let cool slightly. In a bowl, mix 1 cup sugar, eggs, and 1 tsp vanilla.
Add 1/3 cup flour, 1/4 cup cocoa, and 1/4 tsp salt. Blend until smooth.
Pour brownie batter into prepared dish and set aside.
In another bowl, beat cream cheese and 1/2 cup sugar until creamy. Add Greek yogurt, vanilla, and 2 tbsp flour; stir until smooth.
Dollop cheesecake mixture over brownies, using a spatula to swirl. Top with cherries.
Bake for 30-35 minutes until a toothpick inserted near the center comes out clean.
Cool completely, then chill for 2 hours before slicing into 16 pieces.
Notes
For best results, let cool completely before slicing.
Chilling overnight improves texture.
Substitute 1/4 cup cornstarch for Greek yogurt as a tangy alternative.
Use fresh cherries for juicier flavor or canned for convenience.
Store in an airtight container at room temperature for 3 days or refrigerated for 5 days.
