Description

A refreshing and hearty chilled salad combining tender chicken, crispy halal turkey bacon, fresh lettuce, juicy tomatoes, and creamy dressing tossed with pasta. Perfect for picnics, potlucks, or easy dinners.


Ingredients

2 cups cooked chicken breast, diced
12 halal turkey bacon slices, crisp
2 cups cooked pasta (penne or fusilli)
1 large head romaine lettuce, chopped
1 pint cherry tomatoes, halved
1/2 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp honey
1 clove garlic, minced
Salt and pepper to taste
1 tbsp olive oil (optional for pasta toss)


Instructions

Cook pasta according to package instructions, drain, and toss with 1 tbsp olive oil to prevent clumping
Cook turkey bacon until crisp, drain on paper towels
In a large bowl, combine cooked chicken, cooked pasta, chopped lettuce, and cherry tomatoes
In a separate bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, honey, and minced garlic
Pour dressing over salad ingredients and toss until evenly coated
Add salt and pepper to taste
Cover and refrigerate for at least 1 hour before serving

Notes

For best results, chill for 2-3 hours before serving
Substitute halal turkey bacon with smoked tofu or roasted chickpeas for vegetarian version
Dressing can be made 24 hours ahead
Store leftovers in airtight container for up to 3 days
