Ingredients
1.5 lbs ground beef or turkey (80/20 blend recommended)
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
3 tablespoons chili powder (adjust to taste)
2 tablespoons ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cans (28 oz each) crushed tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
2 cups beef broth
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat.
Add chopped onion and sauté until softened, about 5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Stir in ground beef or turkey and cook until browned, breaking into small pieces with a spoon.
Add chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to coat the meat evenly.
Pour in crushed tomatoes, kidney beans, pinto beans, and beef broth. Stir to combine.
Bring the mixture to a boil, then reduce to a simmer and cook for 1 hour to 1 hour 30 minutes, stirring occasionally.
Taste and adjust seasoning as needed.
Serve warm with your favorite toppings like cheese, sour cream, and cilantro.
Notes
For a vegetarian option, substitute the ground beef with textured vegetable protein (TVP) or lentils.
For extra heat, add a teaspoon of cayenne pepper or a diced jalapeño when browning the meat.
