Ingredients
2 large boneless, skinless chicken breasts (about 1.5 lbs total)
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1.5 cups breadcrumbs (plain or Italian-style)
1/2 cup grated Parmesan cheese, plus more for serving
1 teaspoon salt
1/2 teaspoon black pepper
2 cups marinara sauce
1.5 cups shredded mozzarella cheese
Instructions
Preheat oven to 400°F (200°C). Butter a baking sheet or dish.
Butterfly or pound chicken breasts to 1/2-inch thickness.
Season chicken with salt and pepper.
Dredge each chicken cutlet in flour, shaking off excess.
Dip floured chicken into beaten eggs, then coat evenly with breadcrumbs and Parmesan.
Heat a skillet over medium heat; cook cutlets 3-4 minutes per side until golden (optional pan-fry step). Transfer to prepared baking dish.
Spread marinara sauce evenly over chicken, then top with mozzarella cheese.
Bake 25-30 minutes until bubbly and lightly browned. Let rest 5 minutes before serving.
Notes
For extra crispiness: pan-fry cutlets before baking. Serve with pasta, garlic bread, or a green salad. Use a meat mallet to evenly pound chicken.
Mozzarella can be substituted with provolone or low-moisture mozzarella for firmer texture.
