Ingredients

¾ cup granulated sugar
2 tablespoons granulated sugar (for topping)
Zest of 1 large lemon
2 tablespoons poppy seeds
2 large eggs (room temperature)
½ cup unsalted butter (melted)
1 cup buttermilk
12 tablespoons fresh lemon juice


Instructions

Preheat oven to 375°F (190°C)
Line a 12-cup muffin tin with paper liners
In a medium bowl, whisk flour, baking powder, baking soda, and salt
In another bowl, whisk eggs, melted butter, buttermilk, lemon zest, and lemon juice
Gradually stir wet ingredients into dry ingredients until just combined
Fold in poppy seeds
Divide batter evenly among muffin cups
Sprinkle reserved sugar over the tops
Bake 18–22 minutes until golden and a toothpick inserted in the center comes out clean
Cool in the pan for 5 minutes, then transfer to a wire rack
