Ingredients
2 cups cooked chicken, shredded or finely diced
1/2 cup mayonnaise
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/2 cup dried cranberries or fresh grapes (halved)
1 tablespoon fresh lemon juice
Salt, to taste
Instructions
Shred or finely dice the cooked chicken.
In a large bowl, mix the shredded chicken with mayonnaise until evenly combined.
Add chopped celery, red onion, and cranberries or grapes.
Stir in lemon juice and season with salt to taste.
Mix until all ingredients are well incorporated.
Notes
Use leftover rotisserie chicken for convenience.
Grapes can be substituted for dried cranberries if preferred.
Add toasted nuts or seeds (e.g., pecans or pumpkin seeds) for extra crunch.
Store in an airtight container in the refrigerator for up to 3 days.
