A classic refreshing side dish combining crisp cucumbers and sweet red onions with a creamy, tangy dressing. Perfect for any meal, this easy-to-make salad is ideal for meal prep or quick gatherings.
Ingredients
2–3 large cucumbers (English or Persian preferred), thinly sliced
½ small red onion, thinly sliced and optional cold water soak
½ cup sour cream or mayonnaise (or a mix of both)
2 tbsp apple cider vinegar
1 tbsp white vinegar
1 tsp salt, or to taste
½ tsp ground black pepper, or to taste
1 tsp chopped garlic (optional)
1 tbsp fresh dill, chopped (optional)
Instructions
Thinly slice cucumbers and red onion. For a milder onion flavor, soak slices in cold water for 10 minutes, then drain and pat dry.
In a large bowl, whisk sour cream or mayonnaise, apple cider vinegar, white vinegar, salt, and black pepper. Optional: add garlic and dill for extra flavor.
Add cucumber and onion slices to the bowl and toss gently to coat with the dressing.
Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
Use English or Persian cucumbers to minimize seeds and enhance crispness.
Adjust dressing consistency with a splash of non-alcoholic vinegar or water.
Store leftovers in an airtight container in the refrigerator for 2-3 days.
For a dairy-free version, substitute mayonnaise with a plant-based alternative.
