Ingredients

2 cups granulated sugar, divided
4 large eggs, room temperature
2 teaspoons pure vanilla extract
1 cup all-purpose flour, spooned and leveled
3/4 cup unsweetened cocoa powder (good quality)
1/2 teaspoon salt (preferably sea salt)
1/2 cup chopped dark chocolate (optional boost)
2 cups pitted cherries (fresh or frozen, thawed)


Instructions

Preheat oven to 350°F (180°C) and grease a 9×13-inch pan
In a large bowl, mix melted butter and 1 1/2 cups sugar until combined
Add eggs one at a time, mixing well after each addition
Stir in vanilla extract
Whisk flour, cocoa powder, salt, and remaining 1/2 cup sugar into the bowl
Fold in chopped chocolate (if using) and cherries
Spread batter evenly in prepared pan
Bake 30-35 minutes until a toothpick inserted into center has moist crumbs
Cool completely before cutting into 16 squares

Notes

Use frozen cherries (thawed and drained) if fresh are unavailable
For chewier brownies, slightly underbake edges while center remains fudgy
Store in an airtight container at room temperature up to 3 days
Cherries can be reduced by 1/4 cup for less tartness
Freeze unbaked batter in portioned ramekins for later baking
