1½ cups graham cracker crumbs (about 1012 full graham crackers)
¼ cup granulated sugar (for crust)
6 tablespoons melted unsalted butter
24 ounces cream cheese (3 (8-ounce) blocks, softened)
¾ cup granulated sugar (for filling)
3 large eggs (room temperature)
1 teaspoon pure vanilla extract
¼ cup sour cream or heavy cream (optional, for extra creaminess)


Instructions

Preheat oven to 350°F (175°C)
Mix graham cracker crumbs, ¼ cup sugar, and melted butter until combined
Press the crust evenly into a greased 9×13-inch baking pan
In a separate bowl, beat cream cheese and ¾ cup sugar until smooth
Add eggs one at a time, mixing well after each
Stir in vanilla extract and sour cream/heavy cream
Pour filling onto the crust
Bake for 25-30 minutes until center is just set
