Description

This Chicken Parmesan Pasta combines crispy breaded chicken, rich marinara sauce, melted cheeses, and al dente pasta for a comforting meal. Quick to make and perfect for weeknights or family dinners.

1.5 lbs chicken breasts, boneless and skinless, cut into 1-inch pieces or strips
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (Panko or Italian-style)
1/2 cup grated Parmesan cheese (plus more for serving)
1 teaspoon salt
1/2 teaspoon black pepper
2 cups marinara sauce
3 oz fresh mozzarella cheese, torn into pieces
1 lb pasta (cooked per package instructions)
Olive oil (for frying)
Fresh basil or parsley (optional, for garnish)
Additional Parmesan cheese (optional, for serving)


Instructions

Preheat oven to 400°F (200°C). Place flour, beaten eggs with 1/2 tsp salt and pepper, and breadcrumbs in three separate bowls.
Coat chicken pieces in flour, shaking off excess, then dip into egg mixture, and press into breadcrumbs until fully coated.
Heat olive oil in a large skillet over medium-high heat. Sauté breaded chicken 3-4 minutes per side, until golden and cooked through. Remove from pan.
Sprinkle chicken with remaining 1/2 tsp salt.
In the same skillet, warm marinara sauce over medium heat. Add cooked pasta to mix with the sauce and a splash of oil to prevent sticking.
Pour pasta mixture into a large baking dish. Nestle chicken pieces on top, then scatter mozzarella and 1/2 cup Parmesan over the chicken.
Bake 8-10 minutes, until cheese is melted and bubbling. Garnish with fresh herbs and additional Parmesan if desired.

Notes

For a faster method, skip baking and top cooked chicken with mozzarella/Parmesan, then broil for 2-3 minutes.
Substitute gluten-free breadcrumbs for a gluten-free option.
Freeze leftover unbaked chicken for 1-2 months.
