Ingredients
Corn Kernels (canned or frozen) 2 cans (15 oz each) or 4 cups frozen
Creamed Corn 1 can (15 oz), do not drain
Sour Cream or Milk 1 cup (full-fat sour cream for richest flavor, or milk for lighter result)
Eggs 2 large, beaten
Butter or Dairy-Free Alternative 1/2 cup (1 stick), melted
Sugar 1/4 cup
Salt 1/2 tsp
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large bowl, combine drained/thawed corn kernels, creamed corn, sour cream or milk, beaten eggs, melted butter, sugar, and salt.
Stir until well blended and smooth.
Transfer mixture to prepared baking dish.
Bake for 45 minutes, or until golden and bubbly with slight crust on top.
Cool slightly before serving.
Notes
Use frozen corn if canned varieties are unavailable.
Dairy-free butter or plant-based sour cream/milk work well as substitutes.
Store leftovers covered in the refrigerator for up to 3 days.
