This hearty slow-cooked chicken recipe combines tender chicken thighs with a rich, savory gravy. Perfect for busy weeknights, it delivers old-fashioned comfort with minimal effort.
Ingredients
2–3 lbs boneless, skinless chicken thighs
2 cups low-sodium chicken broth
1 (10.5 oz) can cream of mushroom soup
2 tablespoons butter
1 medium onion, chopped
3 cloves garlic, minced
3 tablespoons all-purpose flour
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Pat chicken dry and season with salt, pepper, and thyme
Place onion and garlic in crockpot
Add chicken on top of vegetables
Pour in chicken broth and canned soup
Cover and cook: 3-4 hours on High or 6-8 hours on Low
Combine flour and 1/2 cup of broth in a bowl to make slurry
In a saucepan, melt butter, add soup mixture and a bit of liquid from the crockpot
Pour slurry into saucepan and simmer 2-3 minutes until thickened
Stir sauce into cooked chicken and serve
