Ingredients
6 cups fresh or frozen peaches, peeled, pitted, and sliced (if frozen, do not thaw)
1 tablespoon freshly squeezed lemon juice
1/4 cup packed brown sugar (for filling)
1 teaspoon ground cinnamon (for filling)
1/2 cup all-purpose flour, optional (for thickening filling)

1 cup rolled oats
1/2 cup unsalted butter, cold, cut into small cubes
Instructions
Preheat oven to 350°F (175°C)
Toss peaches with lemon juice, 1/4 cup brown sugar, 1 teaspoon cinnamon, and 1/2 cup flour (optional) in a 9×9-inch baking dish
In a separate bowl, combine 1/2 cup brown sugar, 1/2 teaspoon cinnamon, 1 cup flour, and oats
Add cold butter cubes to dry topping, using a pastry cutter or fingers to work in until crumbly and pebbly
Spoon topping evenly over peaches
Bake 35-45 minutes until golden-brown and bubbly
Notes
For frozen peaches, keep them solid when adding to the dish
Adjust sugar based on peach sweetness
Store covered at room temperature for 1-2 days or refrigerate for up to 5 days
