Ingredients
2.5 to 3 lbs Boneless, skinless chicken breasts or thighs (thighs offer more moisture and flavor)
18 to 24 oz BBQ sauce (your favorite brand or homemade)
1 medium Onion (chopped or sliced; yellow or white work well)
1 tsp Garlic powder (or 2–3 cloves fresh garlic, minced)
1 tsp Smoked paprika (adds a lovely smoky depth)
1 to 2 tbsp Brown sugar or sweetener (omit if using sweet BBQ sauce)
Instructions
Place chicken breasts or thighs in the slow cooker.
Add chopped or sliced onion beneath and around the chicken.
Sprinkle with garlic powder, smoked paprika, and brown sugar or sweetener.
Pour BBQ sauce over the chicken, making sure it’s well-coated.
Cover and cook on High for 3–4 hours or on Low for 4–6 hours, until the chicken is tender and easily shreds.
Shred the cooked chicken with two forks, ensuring it’s well-coated in the sauce.
Serve on soft buns with your favorite toppings like coleslaw, pickles, or extra sauce.
Notes
For optimal flavor, let the chicken marinate in the sauce for at least 10 minutes after cooking.
If using low-fat BBQ sauce, adjust sweetener to ½ tablespoon to prevent dryness.
Verify sauce is pork-free if following strict halal guidelines.
Cook times can vary slightly—keep chicken submerged in sauce for best results.
Store leftover chicken in the sauce in an airtight container in the fridge for up to 4 days.
