Ingredients
1 (9-inch) prepared graham cracker crust
8 ounces softened cream cheese
1/2 cup granulated sugar
1 (3-ounce) package watermelon gelatin mix
1/2 cup boiling water
3 cups watermelon puree (from approximately 5 cups watermelon cubes, rind removed)
1 (14-ounce) package chilled whipped topping (e.g., Cool Whip)
Instructions
Prepare the graham cracker crust and press it firmly into a 9-inch pie dish. Set aside.
In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar, mixing until fully incorporated.
Fold in watermelon puree until the consistency is uniform. Gently stir in chilled whipped topping to create a fluffy texture.
Spoon the cream cheese mixture into the crust and smooth the top.
In a separate bowl, dissolve the watermelon gelatin mix in boiling water per package instructions. Let cool, then pour over the cream cheese layer.
Chill the pie for 4 hours or until the gelatin is fully set.
Before serving, garnish with additional whipped topping and fresh watermelon pieces.
Notes
For a halal/vegetarian version, use agar-agar instead of traditional gelatin mix.
