Description

A refreshing, simple salad that blends crisp cucumbers, juicy tomatoes, and bright dill for a light and tangy side dish. Perfect for summer meals, picnics, or as a lively accompaniment to heartier fare.

Ingredients

Scale

2 large cucumbers, peeled and seeded,
3 cups ripe tomatoes (chopped),
1/2 cup red onion (finely chopped),
1/4 cup fresh dill (chopped),
3 tablespoons white vinegar or apple cider vinegar,
1 teaspoon salt,
1/4 teaspoon black pepper,
1 tablespoon olive oil (optional)

Instructions

Chop cucumbers into bite-sized pieces
Dice tomatoes into 1-inch pieces
Finely chop red onion and soak in cold water for 10 minutes to reduce sharpness
Chop fresh dill
In a bowl, combine cucumbers, tomatoes, drained onion, and dill
Add vinegar, salt, and pepper; toss to coat
Optional: drizzle with olive oil before serving

Notes

Pre-soaking onion mellows its pungency
Use English (seedless) cucumbers for less preparation
Cherry tomatoes make a colorful alternative
Store in an airtight container in the fridge for up to 2 days
Serve chilled for optimal freshness
