Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 cups milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
Preheat waffle iron to medium-high heat.
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat eggs, then add milk, melted butter, and vanilla.
Gradually pour wet ingredients into dry, mixing until just combined (some lumps okay).
Let batter rest 5 minutes.
Pour 1/2-cup batter onto preheated waffle iron and cook until golden (3-4 minutes).
Repeat with remaining batter.
Notes
Use gluten-free flour for a GF option. Substitute non-dairy milk and vegan butter for a vegan version. Store waffles in airtight container for up to 2 days. Reheat in toaster for crispiness.
