Description
A hearty American comfort dish combining ground beef in a creamy mushroom and sour cream sauce, served over tender egg noodles. Easy to prepare and bursting with rich, savory flavor, this stroganoff is perfect for weeknight dinners or cozy family meals.
Ingredients
1.5 pounds ground beef (80/20 or 85/15 lean)
12 ounces egg noodles (wide or medium)
2 tablespoons butter (salted or unsalted)
1 medium yellow onion, finely chopped
8 ounces mushrooms (cremini or white), sliced
3 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups beef broth (low sodium preferred)
Salt and pepper, to taste
1 cup sour cream (full-fat or light)
Instructions
Preheat oven to 350°F (180°C)
Cook egg noodles according to package instructions. Drain and set aside.
Heat 1 tablespoon butter in a large skillet over medium heat. Add onions and sauté until translucent, about 5 minutes.
Add mushrooms and garlic, cook 3-4 minutes until mushrooms release moisture and brown slightly.
In a separate pan, cook ground beef over medium heat. Season with salt and pepper. Break apart beef into small pieces and cook until browned. Drain excess fat.
Stir in flour to the beef mixture. Cook 1-2 minutes to let flour toast slightly.
Slowly pour in beef broth, stirring to avoid lumps. Bring to a simmer and cook 5 minutes until sauce thickens.
Reduce heat. Stir in sour cream and remaining butter until sauce is smooth and creamy. Season to taste.
Toss hot egg noodles with sauce. Serve warm, optionally garnished with fresh parsley.
Notes
Use low-fat sour cream for lighter version
Replace ground beef with ground chicken/turkey for variation
Store in fridge for 3-4 days
Leftovers freeze well up to 2 months
