Ingredients
1 (9-inch) pie crust, unbaked (homemade or store-bought)
4–5 medium ripe tomatoes, sliced 1/4-inch thick
6–8 slices plant-based ‘bacon’ (e.g., textured soy or coconut-derived alternative), cooked and crumbled
1 cup full-fat mayonnaise
1.5 cups shredded sharp cheddar cheese
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Roll out pie crust and fit into a 9-inch pie dish, trimming edges and crimping
In a bowl, combine plant-based ‘bacon’, mayonnaise, cheddar cheese, salt, and pepper until well mixed
