Description

A golden, flaky pie filled with ripe tomatoes, crispy plant-based ‘bacon,’ and a creamy, cheesy mayonnaise mixture. This hearty, no-fuss recipe offers a balance of savory and fresh flavors, perfect for casual meals or family gatherings.

Ingredients

Scale

1 (9-inch) pie crust, unbaked (homemade or store-bought)
45 medium ripe tomatoes, sliced 1/4-inch thick
68 slices plant-based ‘bacon’ (e.g., textured soy or coconut-derived alternative), cooked and crumbled
1 cup full-fat mayonnaise
1.5 cups shredded sharp cheddar cheese
Salt and pepper to taste

Instructions

Preheat oven to 375°F (190°C)
Roll out pie crust and fit into a 9-inch pie dish, trimming edges and crimping
In a bowl, combine plant-based ‘bacon’, mayonnaise, cheddar cheese, salt, and pepper until well mixed
Layer tomato slices evenly in the crust, slightly overlapping
Spoon the bacon-mayo mixture over the tomatoes
Bake for 40-45 minutes, until pie is golden and bubbly
Let cool slightly before serving

Notes

Use oven-safe pie weights or dried beans to pre-bake the crust if desired, but pressing the filling into a cold crust works well for this recipe
Store leftovers in an airtight container in the fridge for up to 3 days
