Ingredients

1.5 pounds carrots, peeled and cut into uniform sticks or coins
2 tablespoons olive oil or unsalted butter (melted if using butter)
2 tablespoons maple syrup
2 cloves garlic, minced
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper


Instructions

Preheat oven to 400°F (200°C)
Toss carrots in a large bowl with olive oil or melted butter
Add maple syrup, minced garlic, salt, and pepper. Mix until evenly coated
Spread carrots in a single layer on a parchment-lined baking sheet
Roast for 20–25 minutes, stirring halfway, until tender and caramelized

Notes

Optional: Add fresh thyme or rosemary for extra flavor.
Use a wire rack under the baking sheet for crispier edges.
