Ingredients
3 ripe medium bananas, mashed
2 cups all-purpose flour
3/4 cup granulated sugar
2 large eggs

Instructions
Preheat oven to 375°F (190°C) and line a 12-muffin tin
Mash bananas in a large bowl until smooth
Stir in sugar, eggs, oil, and mashed bananas until combined
In a separate bowl, whisk flour, baking soda
Gradually mix dry ingredients into wet ingredients until just combined
Spoon batter into prepared muffin tin
Bake for 20-25 minutes or until a toothpick inserted comes out clean
