Ingredients

6 cups seedless watermelon, cubed and chilled
1 cup crumbled feta cheese (sheep’s milk preferred)
1 large cucumber, chopped (seedless or English)
1/2 cup fresh mint leaves, loosely packed and chopped
1/4 cup extra virgin olive oil
3 tablespoons fresh lime juice
2 tablespoons honey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper


Instructions

Cube watermelon and chill it
Chop cucumber and mint
Combine watermelon, cucumber, mint, and feta in a large bowl
In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper
Pour dressing over salad
Toss gently to coat
Adjust seasoning as needed

Notes

Chill watermelon in the fridge for 30 minutes before using for best texture
Dressing can be made 2 days in advance
For vegan option, substitute feta with vegan cheese crumbles
Serve immediately or refrigerate for up to 2 hours before serving
