1 ½ cups graham cracker crumbs (about 10 full graham crackers)
¼ cup granulated sugar (for crust)
½ cup granulated sugar (for filling)
6 tablespoons unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
2 large eggs, room temperature
1 teaspoon non-alcoholic vanilla essence
2 cups fresh strawberries, sliced
1 cup fresh blueberries, halved


Instructions

Preheat oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs, ¼ cup granulated sugar, and melted butter until crumbly. Press the crust evenly into a 9×13-inch baking pan.
Bake the crust for 10 minutes. Allow it to cool slightly.
In a separate bowl, beat the cream cheese, ½ cup granulated sugar, eggs, and non-alcoholic vanilla essence until smooth and well combined.
Spread the filling over the cooled crust, then gently press the sliced strawberries and blueberries into the top.
Bake for 30–35 minutes, or until the filling is set and the top is lightly browned. Let the bars cool completely at room temperature.
Once cooled, refrigerate for at least 2 hours before slicing into 16 bars.
