Ingredients
2 cups cheddar cheese, finely shredded
1 (4 ounce) jar pimentos, drained and finely chopped
1/2 cup mayonnaise, full-fat recommended
4 ounces cream cheese, softened
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch of cayenne pepper (optional, for heat)
Instructions
In a large bowl, combine shredded cheddar, pimentos, mayonnaise, and cream cheese.
Stir in garlic powder, salt, black pepper, and cayenne pepper (if using) until well incorporated.
Mix until a smooth yet slightly chunky consistency forms. Adjust seasoning to taste.
Cover and refrigerate for 30 minutes before serving to allow flavors to meld.
Notes
For a smoother texture, use a food processor.
Refrigerate unused portions in an airtight container for up to 3 days.
Add diced jalapeños or hot sauce for extra spice. Serve with crackers, bread, or as a veggie dip.
