Ingredients
2 cups frozen hash browns or 4 stale bread slices, cubed
6 large eggs, room temperature
1 cup whole milk or 2% milk
1.5 cups shredded cheddar cheese, divided
1 pound halal breakfast sausage (chicken or turkey), casing removed
1/2 medium onion, finely chopped
Instructions
Preheat oven to 375°F (190°C)
Place hash browns or bread cubes in a greased 9×13-inch baking dish
Cook halal sausage in a skillet over medium heat until browned, about 5 minutes
Add chopped onion to the sausage mixture and cook until tender, about 3 minutes
In a large bowl, whisk together eggs and milk until smooth
Add half of the cheddar cheese to the egg mixture and stir until melted
Pour the egg mixture evenly over the hash browns or bread in the baking dish
Sprinkle the remaining cheddar cheese over the top
Bake for 40-45 minutes until the top is golden and the edges are bubbly and set
Let cool slightly before slicing and serving

Use halal sausage (chicken or turkey) as a pork-free alternative
If using cubed bread, choose slightly stale bread for the best texture
