Granulated sugar (¾ cup, plus extra for topping, optional)
Baking powder (2 teaspoons)
Ground cinnamon (1 ½ teaspoons, plus more for dusting, optional)
Salt (½ teaspoon)
Large eggs (2, room temperature)
Milk (1 cup, whole or 2%)
Vegetable oil (1 cup, such as canola or sunflower)
Vanilla extract (1 teaspoon)
Apple (2 cups, diced (~3 medium, peeled and grated or finely chopped))


Instructions

Preheat oven to 375°F (190°C)
Line a 12-cup muffin tin with paper liners
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt
In a separate bowl, whisk eggs, milk, oil, and vanilla until combined
Gradually pour wet ingredients into dry ingredients, stirring until just mixed
Fold in grated apple until evenly distributed
Divide batter among prepared muffin cups, filling each about ¾ full
Bake for 18-22 minutes or until golden and a toothpick inserted in the center comes out clean
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
