A vibrant Mediterranean-inspired salad combining sweet watermelon, crisp cucumber, fragrant mint, salty feta, and zesty lime. Perfect for summer gatherings and light, refreshing meals.


Ingredients

6 cups watermelon, seedless, cut into bite-sized cubes
1 medium cucumber, diced (English or Persian)
1/2 cup fresh mint leaves, loosely packed and roughly chopped
1/2 cup feta cheese, crumbled
3 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1 teaspoon salt
1/4 teaspoon freshly ground black pepper


Instructions

Chop watermelon and cucumber into bite-sized pieces
Toss mint leaves until roughly chopped
Crush feta cheese into small crumbles
In a small bowl, whisk together lime juice, olive oil, salt, and pepper to make dressing
In a large bowl, combine watermelon, cucumber, mint, and feta
Pour dressing over salad and gently toss to combine
Chill for 15-20 minutes before serving

Notes
