Ingredients
1.5 lbs lean ground turkey
1 large onion, finely chopped
2 medium carrots, diced
1 cup peas, frozen or fresh
3 cloves garlic, minced
1/4 cup all-purpose flour
2 cups beef broth, low-sodium preferred
Instructions
Preheat oven to 375°F (190°C)
Sauté onion in olive oil until softened
Add ground turkey and garlic, cook until browned and no longer pink
Stir in carrots, peas, and tomato paste, sauté for 5 minutes
Sprinkle flour over the mixture and cook for 2 minutes
Gradually add beef broth, stirring until thickened
Transfer mixture to a baking dish
Top with 4 cups mashed potatoes (1.5 lbs potatoes, 2 tbsp butter, 2 tbsp milk)
Bake for 25 minutes until golden and bubbly
