1 cup (2 sticks) cold, cubed unsalted butter (½ cup for streusel, ½ cup for cake)
2 large eggs
1 cup sour cream or milk
1 teaspoon baking powder
2 teaspoons vanilla extract
¼ cup (1 cup streusel) additional flour
¼ cup (1 cup streusel) additional brown sugar
¼ teaspoon (1 cup streusel) additional cinnamon
Optional: ¼ cup powdered sugar for glaze
Instructions
Preheat oven to 350°F (180°C)
Grease a 9-inch round or square baking pan and dust with flour
In a large bowl, cream ½ cup softened butter, 1 ½ cups sugar, and 2 eggs until light and fluffy
Mix in 2 ½ cups flour, 1 teaspoon cinnamon, ½ teaspoon salt, and baking powder
Stir in sour cream, milk, and vanilla extract until just combined (do not overmix)
In a separate bowl, combine ½ cup cold cubed butter with ¼ cup flour, ¼ cup brown sugar, ¼ teaspoon cinnamon, and ¼ cup granulated sugar. Mix until crumbly
Pour batter into prepared pan. Spread streusel over the top
Bake for 35-45 minutes until golden and a toothpick inserted in center comes out clean
Cool slightly, then dust with powdered sugar if desired. Serve warm
Notes
If sour cream is unavailable, substitute with 1 cup milk for a lighter texture.
For best flavor, don’t skip the cinnamon in the streusel.
